BBQ Seared Murray Cod & Lemon Myrtle Pippies
Ingredients
1 Murray Cod
20 Saltwater Pippies
Dry Lemon Myrtle Leaves
Salad Mix
1 Red Onion
1 Cucumber
5 Cherry Tomatoes
Salad Leaves
Peppercorns, Salt, Chilli flakes
Cooking Preparation
Chop head from Cod
Align fins of scale with bone and cut to make cod steaks
Heat Pan or grill and cook in olive oil place cod steaks in pre heated pan and cook on each side for 8 mins on medium
Season Pippies with black pepper salt and chilli flakes
Place Pippies on flat plate and cook until shells open, cook for 6 minutes
Salad Preparation
Salad Leaves
1 Red Onion
2 Cucumbers
8 Cherry Tomatoes
1 Fresh Corn
Dressing
250ml Brown Vinegar
3tbls Sugar
Pinch Salt & Pepper
1 tsp Lemon Myrtle Leaves
Olive Oil
Kangaroo Skewers with Asparagus
Ingredients
Kangaroo Meat
Asparagus
Olive Oil
Salt & Pepper
Dried Onion Flakes
Cooking Method
Slice Kangaroo into evenly pieces about ½ centimetre each long ways
Place meat on skewers placing each in a row together
Cook to taste
Cook on BBQ for at least 6 minutes each side on hot plate
Cook Asparagus on hot plate for 3 minutes
Once cooked season with Black pepper
Ready to serve, Serves one
Garnish with Fresh Sliced Lemon
